5K

I'm participating in my first 5K for Race for the Cure this weekend.  Race for the Cure hits close to home for me and I'm glad that I can have fun while doing my part to help out!

HDSM (my firm) is sponsoring our team and we got fun jerseys to wear!!

It is supposed to rain so we might be swimming rather than running so wish me luck!!!

Peanut Butter Chocolate Goodness!!!

Thanks to Pinterest I have discovered another new favorite dessert! 

Crunchy Peanut Butter Cups......can you say YUM!

They are super easy to make and require no baking.  All you need is:

1/4 cup butter
3/4 cup peanut butter
3/4 cup graham cracker crumbs
1/4 cup sugar
1 cup semisweet or milk chocolate chips
1/4 cup milk
Sea salt

Line a  muffin tin with papers (you could also use a mini muffin tin if you prefer).

In a microwave safe bowl, melt the butter & peanut butter together for 45 seconds.  Stir until smooth.  Add graham cracker crumbs and sugar and mix to combine.  Distribute mixture evenly between the prepared muffin cups.  Refrigerate for 15 minutes to set peanut butter layer.

 

After the peanut butter has chilled, combine chocolate and milk in a microwave safe bowl and heat in 25 second intervals until chocolate is just melted.  Stir until smooth.  Distribute chocolate evenly over the top of the peanut butter layer. 

Sprinkle with sea salt and chill until firm, at least 30 minutes.  Store covered in the fridge. 

My pictures don't do it justice!! I do recommend using mini muffin tins because these are so rich.

West Texas

For labor day weekend I traveled back to good ole West Texas!!!

My first stop was in Wall to visit with some of my Dad's side of the family! It is always a blast when we get together! There are so many sweet little ones that there is never a dull moment.  I love when I get to see their sweet faces and even though we are cousins they call my Aunt Chelsea...I'll take it :)

After my day in Wall, I headed back to Lubbock for the rest of the weekend where I got my Rockfish fix and got to visit with all of my favorite people!! Jill and I rocked the rooftop (as usual) and it was great!  I love being able to go back and see everyone!
