Cheesecake Stuffed Strawberries

No your eyes are not playing tricks on you...I made CHEESECAKE STUFFED STRAWBERRIES!!! And I must say, they are delicious!!! 

All you need is:

1lb of Fresh Strawberries
8oz. package of softened cream cheese
1/2 cup powdered sugar
1/2 tsp of vanilla
About 1 1/2 graham crackers







First you will want to wash the strawberries and cut off the tops and then gut the insides. I used a small knife...pretty easy!!



Now to make the filling all you do is blend the cream cheese, powdered sugar, and vanilla until smooth. I placed it in a small baggie and cut the corner off to pipe the filling into the strawberries!

Then take your three graham cracker haves and crunch them until they just a big pile of crumbles..

Finally, dip the strawberry in the crumbles and they are ready to go!!!!



You can even drizzle chocolate over them if you'd like! I took them to work and they were gone quick!! Enjoy!!!!!!

Memorial Day Weekend

What a weekend!! I did NOT get a lot of running in this weekend....Ok, actually I got none in...but it was such a fun weekend.

On Friday after work, I went back home to Rotan to hang out with my parents before their "surprise" retirement party on Saturday. (It was supposed to be a surprise, but my Aunt and my Mother talk too much and nothing is ever kept a secret!!!) It was a lot of fun to have all of my family and close friends together to celebrate all the years my parents gave to teaching! Pictures to come!!

On Sunday I woke up early and drove to Lubbock in time to go to my old church there. And afterwards surprised Jill at Rockfish, which resulted in excited screams, big hugs, and customers staring! I finally got my Rockfish craving satisfied while I waited for Jill to get off :) We spent the rest of that afternoon layed out by the pool. Then it was off to dinner at Fuzzys...YUM. We finished the night by going to sing Karaoke, and I must say that Jill, Susan, Chelsea, and I rocked out LFO's Summer Girls!!

On Monday, I finally got to see Renee and her little girl, Harper. When I moved to Waco, Harper had just been born and now she almost 3 months. She is such a cute baby girl!! I miss them to death! Then I made the long journey back to Waco.(oh how I love being in the car) I have to add that since it was a holiday, the police where out in full force and I did not...I repeat did NOT get a ticket!!! If you know me at all you know how big of a deal this is!!!

It was a whirl-wind of a weekend, but one of the best weekends to be able to be with all of my family and friends!! Hope you all had as much fun on your Memorial Weekend!! Now it's back to work and back to training...Zumba tonight followed by a quick mile.

Hello Blogging World!

I have decided that in one year I want to run a full marathon....(yes the full 26.2 miles and yes my body cringes at the thought still). But I've got it in my mind that I want to do this and feel that it will be so rewarding to finish such a feat. I needed a way to keep up with progress, milestones, emotions, etc.. and decided that bogging may be my best option. My cousin and a few friends have all been "blogging" and I really enjoy reading them and looking back and remembering things.  So here goes nothing!

I just recently really starting "training" and well....who knew how out of shape a person could be!! There are few obstacles that I'm getting used to, 1) Did you know that there are hills in Waco!! I'm used to my west Texas terrain which is flat for as far as the eye can see and 2) It is humid in Waco. I am used to the heat...but dry heat is so much easier to breathe in vs. this hot and humid weather out here. But eventually I'll get used to both (I hope)!

 My goal right now is to just get my body used to moving constantly for at least 30 min. (Easier said than done!) I definitely have to walk more than I would like but on Monday I finished 3 miles in right under 30 min. Whew! 

I have enlisted my good friend, Michael Mann, to be my running partner in crime.  Though a little reluctant at first he has agreed and we have starting pushing each other! Also, one of my co-workers has starting running with me...(she is way better shape than I am) She has been the one to keep me on a schedule and makes me push myself during the run. But I would love any tips or advice from others.
